No-Sugar Simple Syrup

Did you know simple syrup doesn't HAVE to be made from granulated sugar?! It's true!

No-Sugar Simple Syrup

This simple syrup is sweetened with pure stevia extract instead of sugar for a sweet, bright, and slightly herby flavor. I love adding this to smoothies, or you can stir into your oatmeal, use it as a base for cocktails and mocktails, create a sweeter vinaigrette dressing for salad, or even create a simple soda with it. The possibilities are (almost!) endless. šŸ˜‰

If you use a different sugar substitute, just be sure to add it in small doses until you reach your desired sweetness level. Every brand is different, so start small and add more as you go.

I prefer PURE stevia extract, since many forms of stevia at traditional retailers have fillers like dextrose, erythritol, and others. The version I like right now is a powdered form, organic, and several hundred times sweeter than sugar.

Customize this by tossing in other herbs, fruit juice, etc. if you'd like a flavored version.

Or, check out more fun varieties on the blog!

In case you'd like to check out the stevia extract I'm currently using:

  • Pure Stevia Extract

Video explaining the process

Stevia simple syrup can be stored in an airtight container. As you can see here, the syrup is almost clear/very slightly cloudy, and is pourable.

Ingredients

  • 1 1/2 cups water (to prevent off-flavors, filtered is recommended but not mandatory)
  • 1/2 teaspoon pure stevia extract
  • 1 teaspoon arrowroot powder (this is optional and just for thickening the syrup)

Method

  1. Simmer water in a saucepan. (Tip: Boil it first in an electric kettle to speed up the simmering process)
  2. Dissolve stevia extract in water by stirring vigorously.
  3. Add a small amount of water to the arrowroot powder to create a slurry and stir into the saucepan until dissolved.
  4. Simmer for 5 minutes to thicken the syrup and until the liquid becomes almost clear.
  5. Cool and store in an airtight container.
